Low FODMAP Broccoli Waffles (Gluten-Free)

Low FODMAP Broccoli Waffles! These broccoli waffles are a great way to eat more vegetables, and I love serving them for breakfast, lunch or dinner! You can fry an egg to throw on top or serve them alongside a bowl of soup. Another option is to make a sandwich out of them — so many options!

However you serve them, I can guarantee that these will be your new favourite waffles. I can’t wait for you to try the broccoli waffles!

The Low FODMAP Broccoli Waffles will get crispy if you toast them for a few minutes on each side, which I always do.

Furthermore, I bagged them up with small pieces of baking paper between them and put them in the freezer for easy addition to any meal!

The flour I use for the waffles is Doves Farm Gluten-free Self-raising flour, and you can buy it here (Holland) or here (Amazon.de).

250300g 1 Broccoli

6 Eggs

100g Cottage cheese LF

30g Oil

1 tsp Salt

1 tsp Baking powder

1 tsp  Xanthan gum * see note

23 tsp Thyme * optional

90g Millet flakes or Oatmeal GF

100g Bob Red Mill flour 1X1* or self-raising flour

Instruktioner

Blend broccoli with eggs, cottage cheese, milk, and oatmeal and pour into a medium bowl. (I only used the top part because of LFM)

Place the rest of the ingredients and blend until well combined.

Heat the waffle iron.

Bake the waffles for 2-4 minutes on each side, depending on the crispiness you prefer.

To serve, place a broccoli waffle on a plate and spread toppings to your liking.

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob’s Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
