Banana Bread With Chocolate (Low FODMAP & Gluten-Free)

The Banana Bread (Low FODMAP & Gluten-Free) is delicious and moist. The sweet banana flavour in this bread is balanced with dark chocolate. The bread is a must-try and is excellent with a cup of tea for an afternoon snack or a children’s snack box.

I have been a big fan of banana bread since I can remember. Every time went to a café, I would order banana bread. I was sad when I found out I couldn’t handle gluten very well! I missed eating a slice of banana bread. On the other hand, it pushed me directly into the kitchen to make gluten-free banana bread, and the result came out perfect.

Bananas are great for baking, and there are so many options. What do you use bananas for in your cooking? I would love to get new ideas.😃
Most of the time, I use unripe bananas to use a more considerable amount because of my IBS.

I like to freeze banana bread in slices and defrost them when needed. For my children’s snack boxes, I put them frozen in their container in the morning, and the piece is ready for them to eat at snack time.

4 Un or ripe bananas

1 tsp Baking soda

2 tsp Ginger

1 tsp raw Vanilia powder

2 tsp Cardamom

2 tsp Cinnamon

1 tsp Salt

1 tsp Baking powder

50g Sugar

4 Eggs

2 tsp Apple cider vinegar

1 dl Oil (60g)

1 dl Milk LF (60g)

300g * Bob’s Red Mill Flour 1 to 1 – look under note

120g Dark chocolate

Instruktioner

Blend the bananas and put them aside.

Put everything in a bowl and mix until well combined with a mixer.

Heat the oven to 180C.

Pour the dough into the baking tin and bake for about 4o minutes or until it’s done.

Serve the bread plain for an afternoon snack, or put a slice in your children’s snack boxes.
