Low FODMAP Inspiration for home-baked peppernuts

I have never been a big fan of store-bought peppernuts as I find them dull and dry. Therefore, I wanted to make my recipe, and I look forward to sharing it with you. I like to add a little twist, so I added lemon to make them fresher because I love liquorice. For me, those two things work great together. Leave it out if you don’t like liquorice, as the cookie will still be great with only the lemon twist.

Danish and Netherlands peppernuts

The peppernuts are usually served during the whole month of December in Denmark and are very popular. In the Netherlands, you did them through November and December. The peppernut you get in the Netherlands differs from Danish ones as they are covered in milk, white and dark chocolate or plain. Lately, I have also seen some with ruby chocolate (pink) or salted caramel, so there are many options. I recently learned there are two traditional types of peppernuts in the Netherlands. Pepernoten, the traditional soft and chewy ones and the crunchy ones, are technically called ‘kruidnoot’ (spice nuts), also common in Denmark.

Childhood memory

My grandmother on my father’s side liked to make a game when I visited them in their house or at other family celebrations and gatherings during the year. When we celebrated Christmas, we often played a game called “mouse”, which went like this: Make a line of raising nuts or, in this case, peppernuts (8-10 pieces). One person decides which peppernuts are the mouse and keeps it for themselves. Now, one person begins to take one peppernut at a time, but when you come to the mouse, you have to stop, and you will hereafter start over. Now it is the next person’s turn to start, and so on.

Low FODMAP Recipe information

Lemon Peppernuts with a Twist recipe are super easy to make. You mix all the ingredients into a dough using your hands or a stand mixer, then roll the dough into bars, cut it into small pieces and roll it into peppernuts balls. Easy peasy!

For the liquorice powder, you can buy it online in the Netherlands luxplus. I know not everyone will be able to get liquorice powder, as it is very Danish. The recipe will work perfectly without it, so no worries if you can’t get your hands on it.

125g Sugar

125g Soft Butter

1/2 dl (30g) Cream (LF if you need it)

1/2 tsp dry Ginger

1/2 tsp Cinnamon

1/2 tsp Black Pepper, freshly ground

1/2 tsp Cardamom

1 tsp Liquorish powder * optional

One organic Lemon – zest

250g Self-raising flour

Instruktioner

Whisk butter and sugar together quickly in a bowl. Stir in whipping cream after.

Stir the dry ingredients, grate the lemon in a separate bowl, and stir this with the wet ingredients.

Combine the mixture until the peppernut dough is firm and easy to assemble.

Roll out the dough into long bars and cut into a suitable size of about one × 1 cm.

The peppernuts are rolled into small round balls and placed close to a baking sheet with baking paper – they rise slightly when baking.

Bake at 200 degrees for about 7-10 minutes – please keep an eye on them because every stove is different. They may need a minute more or less in your oven, and they need to be lightly golden.
