The lemon contributes a sour and excellent taste to the crispy Lemon Waffles with Blue Poppy Seeds. It is delicious to combine with creamy yoghurt mixed with vanilla powder, shredded coconut flakes, and fresh berries. If you love lemon as much as I do, you could spread lemon curd on top with blueberries. It’s one of my favourite combinations.
One important thing worth saying is how easy the Gluten-Free Lemon Waffles with Blue Poppy Seeds are to make. Of course, you cannot rush the waffle iron, but the process you have to work on yourself is something close to 10 min. The Lemon Waffles with Blue Poppy Seeds will light up the breakfast or brunch table.

2 Lemon
30g Coconut oil
6 Eggs
3 dl Milk (lactose-free if needed)
Pinch Salt
1 tsp Vanilla powder
1 tsp Baking powder
1 tsp Cardamom
1 tsp Xanthan gum *
3 tbsp Blue poppy seeds
3 tbsp Sugar
90g Oatmeal GF
100g Bob’s Red Mill GF 1 to1 * or use self-raising flour
Instruktioner
Grate lemon zest and squeeze juice into a small bowl.
Melt coconut oil.
Preheat the waffle iron.
Mix everything in a medium bowl with a hand mixer until well combined. Add the lemon zest and squeeze the juice into the mixture.
Grease the waffle iron with coconut oil (only for the first one), and bake the waffles.
You can also use the dough for Belgian waffles if you fancy!
