Gluten-Free Coconut Waffles with creamy yoghurt, blueberry jam and shredded coconut are the most delicious combination.
6 Eggs
1,5 dl milk
1/2 dl Coconut oil (30g)
Pinch Salt
1 tsp Xanthan gum *
1 tsp Baking powder
2 tbsp Coconut fibre flour
60g Shredded coconut
90g Hot cereal oat bran *
100g 100 g Bob Red Mill flour 1X1 *
Heat the waffle iron.
Blend all the ingredients for the waffle dough together.
Bake the waffle until you have no more dough left.
Serve the waffles with creamy yoghurt, blueberry jam (sugar-free) and shredded coconut flakes.
