Carrot Waffles are healthy to eat for breakfast or delicious for a dessert! The waffles are quick and easy to make; furthermore, you can top them with your favourite toppings. Carrot waffles are a delicious start to the day, a sweet little snack or a healthy everyday dessert. I love the taste of carrot, and I love waffles - so I decided to combine them. Last but not least, waffles are faster to make than baking a cake; it is at least as delicious, but much much healthier! You can eat Waffles for all meals and any occasion if you ask me!Print

240g Roughly grated Carrot
Heat waffle iron.
200g Oatmeal
75g Whole-grain buckwheat flour
2 tsp Cinnamon
1 tsp Ginger
1 tsp Cardamom
1 tsp Baking powder
1 tsp Xanthan gum *
4 dl Milk
30g Coconut or sunflower oil
4 Eggs
1 tsp Vanilla essence
Instruktioner
Roughly grate the carrot and put it aside.
Mix all dry ingredients in a bowl.
Stir in milk, oil, eggs and vanilla essence together with carrots in another bowl.
Add the wet mixture to the dry one and whisk it thoroughly together until well-combined.
Bake the waffle and continue until there is no more dough left.
Serve the waffles with yoghurt, pecan nuts and grated carrot.
