How I Came Up With The Idea Of Komatsuna Pancakes
I found all ingredients and put them on the table, and I took what I thought was spinach, as I wanted to make spinach pancakes. While rinsing the leaves, I thought it looked different from spinach, but I decided to continue. Next, I blended eggs, milk and what I thought was spinach, and the colour was much darker.
I found the bag it came in, and google translated it into komatsuna and had no idea what it was……….
Luckily I have a Japanese friend I sent a text to, and she told me what it was and how I could use it.
Well, this is also a way to learn new things & foods……….
Savoury Komatsuna Pancakes
Savoury Komatsuna Pancakes are a beautiful fresh green and can be eaten at any meal during the day. Though, for the most part, I have eaten them for lunch or dinner. I like to use them as wraps, where I toast them on both sides, so they get crispy.
You can put any filling in the pancakes you like and prefer, so as you can see, there are many options!
Use Savoury Komatsuna Pancakes For Snack?
Yes, you can.
You can spread lemon curd or nut butter and fill the pancakes with a lot of fresh fruit.

Can I Change The Flour?
Yes, you can.
You can also use all-purpose gluten-free flour, so it should be easy for you to start.
My favourite flour for pancakes is Bob Red Mill gluten-free flour 1X1 which works excellent for either waffles, cookies, or cakes.
How To Storage Komatsuna Pancakes
Any leftovers pancakes you can freeze with a small piece of baking paper between each one.
That way, you can take one out at a time when needed.
I always make sure to make extra so that I can fill up our freezer with goodies!

1 L Milk or water
200g Komatsuna
6 Eggs
Pinch Salt
500g Bob Red Mill flour 1X1 * see note
Oil (frying)
Instruktioner
Blend half of the milk with komatsuna and pour it into a large mixing bowl.
Add the rest of the milk, eggs and salt. Sift the flour in the bowl and use a hand-held mixer until well combined.
Preheat a pan over medium-high heat with a bit of butter( only for the first one).
Serve the pancakes with your favourite fillings and salad.
