Savoury Komatsuna Pancakes are beautifully fresh and green and can be eaten at any meal during the day.
1 L Milk or water
200g Komatsuna
6 Eggs
Pinch Salt
500g Bob Red Mill flour 1X1 * see note
Oil (frying)
Blend half of the milk with komatsuna and pour it into a large mixing bowl.
Add the rest of the milk, eggs and salt. Sift the flour in the bowl and use a hand-held mixer until well combined.
Preheat a pan over medium-high heat with a bit of butter( only for the first one).
Serve the pancakes with your favourite fillings and salad.
