Veggies Savoury Pancakes are super delicious food pancakes and a great way to make homemade wraps filled with vegetables.
The pancakes are filled with many good things, such as curry and turmeric and are a great way to eat more vegetables.
Veggies Savoury pancakes are quick to make and perfect for helping you empty the fridge and eat various vegetables leftovers in a pancake!
What not to like?
I have kept the pancakes neutral in taste, but they will also be delicious to spice up a bit with; for example, try adding garlic oil, a little cumin, fresh herbs, chilli, coriander or paprika.

How can I use the Veggies Savoury Pancakes?
You can use them for any main meal during the day, and for the filling, I recommend the following:
- Mixed salads leave
- Finely chopped cabbage
- Tomato, cucumber, paprika, zucchini, mango, and apple in dice
- Spicy chicken or beef
- Dip & Dressing; salsa, avocado dip or sour cream
- Salted nuts & seeds; peanuts, pecan or pine nuts & pumpkin or sunflower seeds
How To Storage Veggies Savoury Pancakes
Freeze the pancakes with small sheets of parchment paper between them, so they don’t stick. (I usually layer them with parchment and freeze them in a sizeable zipped-top bag.)

200g Zucchini
200–300g Cabbage
1 L Water
6 Eggs
Pinch of salt
1 tsp Turmeric
2 tsp Curry
500g Bob Red Mill flour 1X1 *
Instruktioner
Cut zucchini into small pieces and add in the blender with the cabbage (I use pre-cut cabbage)
Pour in half of the water and blend thoroughly.
Add the liquid to a large bowl and put the rest of the ingredients in the bowl—Mix with a hand-held mixer until well combined.
Start frying the pancakes; I like to use a little oil for the first one. It is not necessary to continue to put oil on the pan for the rest.
I love serving them warm, but they’re excellent at room temperature too.
