In Denmark, we have many cooking traditions in December. We live in our kitchen. There are so many great Christmas recipes we must make for Christmas. This recipe for traditional Danish aebleskiver is probably one of the most famous Christmas desserts that the Danes love and eat during Christmas.

In Danish, we call this dessert aebleskiver, and if you directly translate, it means Apple Slices, although there aren’t any apples in this recipe. An aebleskive is like a spherical pancake; it’s solid but still fluffy and light.

These aebleskive are extremely popular in Denmark during the Christmas holidays and are found in almost every supermarket from November until after Christmas. However, the ones you can buy at the supermarket differ from homemade ones. The ones you make yourself are way more delicious.

This year was the first time my children tasted an aebelskive since we have lived abroad for ten years. Since we moved back to Denmark, they can begin tasting all the wonderful Danish treats. Luckily they like them very much, and I have forgotten how they taste. Yum!

How To Find A Aebleskive Frying Pan

The frying of the aebleskiver is done in a special aebleskive frying pan. The traditional pans are made of cast iron. In Denmark, these pans can be bought everywhere from November to December. Internationally, these pans can also be purchased online.

The original recipe for aebleskiver. These traditional pancake balls are traditionally served during Christmas. However, they are also good for the rest of the year.

1/2 Vanilla bean seeds

320g Bobs Red Mill 1X1 GF flour * or self-raising flour

1/2 tsp Salt

1/2 tsp Baking powder

1 tsp Baking soda

1,5 tsp Cardamom

12 tsp Sugar

1 Organic lemon zest

3 Eggs

4,5 dl

30g Melted butter

Butter for frying

Instruktioner

Come flour, baking soda, baking powder, cardamom, salt, ½ vanilla bean seeds and grated lemon zest in a bowl.

Separate the egg white and yolks in separate bowls. Whisk the egg yolks with buttermilk and melted butter. Stir it into the dry ingredients.

Whisk the egg whites stiff so they farm peaks and do not fall out of the bowl if you turn it upside down.

Mix the stiff egg whites slowly in the batter without beating out the air.

Heat the aebelskive pan and add a small piece of butter in each whole. Fill the gaps ¾ with the aebelskive batter.

When the batter starts to firm, and you can turn them over without cracking, turn the aebleskiver 90 degrees ( using a wooden stick) and let the batter flow into the pan.

At this point, there is a hole inside the aebleskiver. Pour extra batter into the hole and turn the aebleskiver another 90 degrees so the gap closes.

When the aebleskiver has a solid surface, turn them regularly to get an even and light-brown crust.

Serve this Danish aebleskiver with jam I prefer blueberry jam), But any kind works and icing sugar.
