Belgian Waffles With Buckwheat (Gluten-Free & Low FODMAP)

These Belgian Waffles With Buckwheat are perfectly served for weekday or weekend breakfast.

Ingredients

Scale

2 unripe  Bananas

6 Eggs

100g Cottage cheese LF

30g Oil

0.5 tsp Cardamom

1 tsp Baking powder

3 tsp Cinnamon

90g Millet flakes or oatmeal

100g Whole-grain buckwheat flour

Instructions

Heat the waffle iron.

Blend bananas, eggs, and cottage cheese until you have a smooth batter.

Add the rest of the ingredients, and continue blending until everything is well-combined.

When making the first waffle, spread a little oil to avoid sticking to the waffle iron. You don’t have to add butter for the rest of the waffles.

Serve the waffle with fresh fruit, mascarpone, cacao nibs, nuts, or your favourite topping.
