Crispy Lemon Waffles with Blue Poppy Seeds are airy, sweet, sour and taste great!
2 Lemon
30g Coconut oil
6 Eggs
3 dl Milk (lactose-free if needed)
Pinch Salt
1 tsp Vanilla powder
1 tsp Baking powder
1 tsp Cardamom
1 tsp Xanthan gum *
3 tbsp Blue poppy seeds
3 tbsp Sugar
90g Oatmeal GF
100g Bob's Red Mill GF 1 to1 * or use self-raising flour
Grate lemon zest and squeeze juice into a small bowl.
Melt coconut oil.
Preheat the waffle iron.
Mix everything in a medium bowl with a hand mixer until well combined. Add the lemon zest and squeeze the juice into the mixture.
Grease the waffle iron with coconut oil (only for the first one), and bake the waffles.
You can also use the dough for Belgian waffles if you fancy!
