Easy Mango Pancakes

These delicious mango pancakes are light, fluffy and loaded with fantastic flavour!

Ingredients

Scale

193g Sifted Gluten-free Self-raising flour (Doves Farm)

1 tsp Baking powder

¼ tsp salt

2 Eggs

3 dl Milk

1 tsp Vanilla paste

80g Melted butter

250 g Mangoes (I used frozen, which was defrosted)

Skyr natural

Mango cubes

Coconut flakes

Instructions

Come flour, baking powder and salt to a medium bowl.

Whisk with electric hand mixer milk, egg, vanilla paste, and melted butter for about a minute. Add all the dry ingredients to the mixture for a few minutes more. You can set the batter aside to rest for 5 minutes. Chop the mango into small cubes and put aside for later.
 
Melt a little butter for the first round on a non-stick skillet and heat on medium heat. Add the dough to the hot surface and repeat until there is no more room. Scatter a few chopped mangoes on top of uncooked pancakes.
 
Cook until bubbles form and pop on the consistency of the batter; for about 3-4 minutes, remove cooked pancakes to a plate and tent them with aluminium foil to keep them warm. Repeat with the remaining batter.
 
Serve with skyr natural mango cubes and coconut flakes.
