The original recipe for apple slices. These traditional pancake balls are traditionally served during Christmas. However, they are also good for the rest of the year.

Ingredients

Scale

1/2 Vanilla bean seeds

320g Bob's Red Mill 1X1 GF flour * or self-raising flour

1/2 tsp Salt

1/2 tsp Baking powder

1 tsp Baking soda

1.5 tsp Cardamom

12 tsp Sugar

1 Organic lemon zest

3 Eggs

4,5 DL

30g Melted butter

Butter for frying

Instructions

Combine flour, baking soda, baking powder, cardamom, salt, ½ vanilla bean seeds and grated lemon zest in a bowl.

Separate the egg whites and yolks in separate bowls. Whisk the egg yolks with buttermilk and melted butter. Stir it into the dry ingredients.

Whisk the egg whites stiff so they form peaks and do not fall out of the bowl if you turn it upside down.

Mix the stiff egg whites slowly in the batter without beating out the air.

Heat the apple slice pan and add a small piece of butter in each whole. Fill the gaps ¾ with the abel slice batter.

When the batter starts to firm, and you can turn them over without cracking, turn the aebleskiver 90 degrees (using a wooden stick) and let the batter flow into the pan.

At this point, there is a hole inside the aeble discs. Pour extra batter into the hole and turn the aeble disc another 90 degrees so the gap closes.

When the apple slices have a solid surface, turn them regularly to get an even and light-brown crust.

Serve this Danish apple slices with jam (I prefer blueberry jam), But any kind works and icing sugar.

Notes

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
