Christmas Rice Pudding

Christmas Rice Pudding is a traditional recipe for Danish Rice Pudding, also known as risengrød. Last year, I made rice pudding every second week, as Emilie and Sebastian liked when I made rice pudding pancakes, also known as klatkager in Danish. They ate them for breakfast on weekdays with maple syrup and peanut butter. They are very delicious, and it keeps them full for a long time, too! Danish traditions

Danish rice pudding is a traditional and popular dish in Denmark to come back to the recipe. In Denmark, this dish is called Risengrød, which means rice pudding. Rice pudding is mainly served in mid-November and December, especially around Christmas. Many families make a large batch of rice pudding on the 23rd of December, where some of it is eaten for breakfast or dinner, and the rest is saved for the 24th. On Christmas Eve, the rice pudding is mixed with raw vanilla powder, whipped cream and almonds, and it’s served as a very delicious Christmas dessert.

Low FODMAP Friendly Rice Pudding

The Christmas dessert is usually made with almonds, but almonds are high in FODMAP, and I don’t handle them very well. So, I decided to swap the almonds for macadamia nuts instead. I don’t miss the almond at all; I think macadamia nuts have an excellent taste and work well with rice pudding.

What You Need For Christmas Rice Pudding

Rice pudding is easy to make, and you only need four different ingredients such as risotto rice, milk LF, water and salt. All the ingredients are poured into a thick-bottomed saucepan and boiled for about 25 minutes. However, it’s important to remember to stir in the pudding every once, so the rice doesn’t burn and stick to the bottom of the saucepan. I prefer to eat rice pudding with fresh fruit, cinnamon sugar and a teaspoon of butter as a topping. My husband and children prefer cinnamon sugar, syrup, and last but not least, butter.

How You Can Use Rice Pudding

The rice pudding can also be eaten as a warm and cooled breakfast, and it has a similar texture to oatmeal porridge. You can also give a small portion in your children’s snacks or lunch boxes. So, with the rice pudding, there are many options.

1 dl Water

360g Risotto rice

2 L Whole milk or lactose if needed

1/2 tsp Coarse salt

Topping

1 tbsp Cinnamon

4 tbsp Sugar

Syrup

Butter

Fresh fruit to your liking

Instruktioner

Bring the water and rice to a boil in a thick-bottomed saucepan. Boil the rice a bit more at a lower heat while stirring for approx. 2 min.

Add milk and bring the mixture to a boil. Cook the porridge over low heat, still stirring, for approx.—10 min.

Put the lid on and cook for approx.—25 min. Stir the porridge often. Cook it for another 5-10 minutes if the porridge seems thin.

Add salt and season to taste.

Mix sugar and cinnamon to your liking and put them aside.

Serve the rice pudding with cinnamon sugar, butter and fresh fruit to your liking.
