This homemade Rosti (Gluten-Free & Low FODMAP) recipe has been given a twist compared to the regular classics potato rosti.

For this one, I added vegetables – probably no surprise there! And included extra spices, such as infused garlic oil and feta – yum!
You can also swap the potatoes with sweet potatoes instead, squash, or add cabbages. There are many options – you can have so much fun making them.
Recommend serving the rosti with avocado and feta on top. You can also use it as an afternoon snack, lunch, or dinner.
The rosti can also go in the lunchbox too. As they also taste good cold!
