Pointed Cabbage Waffles (Gluten & Lactose-Free)

These Pointed Cabbage Waffles are a great way to eat more vegetables in your daily life and have a lovely taste. I added curry and turmeric because I thought they would work well together, which they did, and the spices gave them a beautiful colour.

I used the waffles for dinner with chicken and a fresh salad with baby spinach, cucumber and tomatoes with plain sour cream. It also works brilliantly with cottage cheese for an afternoon snack.

I always have pointed cabbage at home and use it for many things such as salad and omelettes or even baking it in the oven. Lately, I have been making different vegetable waffles, as you may have noticed, and I thought, why not use cabbage? I was a bit worried about how the result would turn out and if it would be possible to make them in a waffle iron. To my satisfaction, the result was perfect and had a wonderful flavour too.

Introducing new waffles

I tried to serve the Pointed Cabbage Waffles to Emilie, and she liked the waffle but without the cottage cheese.

I started making these waffles about six years ago, and the results have improved tremendously. At the start, they were a bit dry, contained no flour and broke quickly. Today the waffles have a great texture, are moist and contain gluten-free flour. I am the first, to be honest, to say that the waffles I make now are the BEST!

300g Cabbage

100g Cottage cheese

6 Eggs

30g Oil

1 tsp Salt

1 tsp Turmeric

23 tsp Curry

90g Millet flakes

100g Bob’s Red Mill GF 1 to1 *or Self-raising flour

Instruktioner

Heat the waffle iron.

Cut the cabbage into pieces and come in the food processor together with eggs.

Add the rest of the ingredients and blend until well combined.

Bake the waffles for 2-4 minutes on each side, depending on the crispiness you prefer.

Use it instead of bread to serve the waffles, and put your favourite toppings on. I think it works very well with chicken because of the curry in the waffles.
