Watermelon Ice. The weather is getting so much better here in the Netherlands! I have made the Low FODMAP Watermelon Ice for the last couple of years, and it continues to be a hit in our family. Now it is time to eat watermelon ice, and I like this healthy recipe a lot because of its freshness and juiciness.
You can feel good about giving this to your child daily or even yourself without feeling bad. You can even have two on the same day! Win-win, if you ask me!
Watermelon contains high FODMAP, so I have been careful not to overeat it. Still, small watermelon ice has been ok for me.

Ingredients
1 small Watermelon
Wooden lolly sticks
Dark chocolate
Coconut flake
Instructions
Cut the watermelon into squares and put the lollipop stick on the button.
Freeze the watermelon ice for about 30 minutes or longer.
Melt the chocolate and put a handful of coconut flakes in a separate bowl.
Take the watermelon ice out and dip them in the melted chocolate. Sprinkle some coconut flakes for a beautiful, finished look.
Serve the watermelon ice on a nice and hot day.
