Oatmeal Cookies! Here is an easy recipe for oatmeal cookies that are soft and chewy. Mixing the dough takes a few seconds, and you are almost done. The sugar amount was higher in the original recipe but reduced as I prefer fewer sweet things.
Another reason to limit the sugar was to make the Oatmeal Cookies a healthy snack. Plus to give the cookies in my children's snack boxes for school or as an afternoon meal at home. Emilie and Sebastian liked the cookies, so I was pleased.

Ingredients
75g Butter
50g Sugar
125g Oatmeal GF
1 Eggs
1 tsp Vanilla powder
1 tsp Baking powder
Instructions
Preheat the oven to 200C.
Line a baking tray with parchment paper and set it aside.
Melt butter and put aside.
Mix all ingredients in a bowl and add the melted butter.
Use two teaspoons to make a small cookie dough top and press lightly.
Bake in preheated oven for approximately 8-10 minutes.
Let them sit on the baking tray for 2 minutes before removing them to the cooling rack.
Serve the oatmeal cookies for friends and family with hot or cold drinks.
