Homemade Chicken Salad (Low FODMAP & Gluten-Free)

Homemade chicken salad. This easy and delicious chicken salad recipe is perfect for breakfast, lunch or dinner. Yes, you heard that right. Most of my meals for lunch and dinner can also be eaten for breakfast. The homemade chicken salad is excellent on Danish rye bread or bread roll. If you don’t fancy bread, you can choose waffles made with vegetables instead.

I like homemade chicken salad, and I hadn’t thought about chicken salad for a long time (years, I think!). One summer holiday, I visited my mum with Emilie and Sebastian, and she served the chicken salad for lunch. I enjoyed it so much! I ate a lot of that salad the entire holiday. Thank you, mum; it was so good. When I came back to Holland, I wanted to make it too. I did again and again!

The mango gives a sweet and lovely taste to the homemade chicken salad, which works great. However, you can also choose a different fruit if mango isn’t your favourite. There are many options. 

I often boil a packet of chicken breasts and put them in the freezer as it allows you to make your chicken salad when you are in a hurry or get unexpected guests. I have tried that!
