I haven’t had a chocolate cake this good in years. I completely forgot how delicious a chocolate cake could be. This is a cake I will make again and again! A bonus is that it contains zucchini; I promise you can’t taste it. I love when I can secretly use vegetables in my baking without anyone noticing. Total win if you ask me. Emilie and Sebastian were quite surprised, but they still loved the cake!
I don’t have much space in my freezer, so I asked a few friends if they wanted some cake, and the answer was yes. They all liked it and couldn’t taste the zucchini on the cake. So, there you go – it is a cake you must try!
There was gluten and a lot of sugar in the original recipe, so I decided to limit the sugar to make a healthier version and make it low FODMAP and gluten-free. I used self-raising flour from Dove’s Farm for the recipe, which you can buy on amazon.de.

Chocolate Cake With Zucchini (Low FODMAP And Gluten-Free) is yummy and delicious.

Ingredients
125g Self-raising flour
40g Cocoa powder
2 tsp vanilla powder
1⁄2 tsp baking soda
1 Pinch Salt
100g Butter (soft)
60g Sugar
50g Coconut sugar
30g Skyr
2 Eggs
250g Zucchini
100g Dark chocolate
Instructions
Grate the zucchini and put it aside.
Chop the chocolate and put it aside.
Mix flour, cocoa, vanilla powder, baking soda and salt together.
Whisk butter and both kinds of sugar lightly with a hand mixer.
Whisk in the skyr and the eggs one at a time.
Turn the grated squash in.
Finally, turn the chopped chocolate in and divide the dough into one greased baking tin (circle). If you like a thin cake, divide it into two baking containers; I prefer thicker.
Bake the cakes at 175 degrees for 30 minutes or until done.
Allow the cake to cool before serving.
Serve the cake with fresh berries of your choice.
