These Belgian Waffles With Buckwheat are perfectly served for weekday or weekend breakfast. You can “dress” them up and down as you want. They are crispy and full of cinnamon flavour. Furthermore, they are sugar-free, too, as the sweetness of the waffle is from the unripe bananas.
Last but not least, they are super easy to make, and you can even make them in the morning on a school day; what’s not to like? I have done it a few times, and our children enjoy the Belgian Waffles With Buckwheat for their breakfast before going to school. If I have any leftovers, I put them in their snack boxes as they still taste great when they are cold or freeze them for another good time!

Ingredients
2 unripe Bananas
6 Eggs
100g Cottage cheese LF
30g Oil
0.5 tsp Cardamom
1 tsp Baking powder
3 tsp Cinnamon
90g Millet flakes or oatmeal
100g Whole-grain buckwheat flour
Instructions
Heat the waffle iron.
Blend bananas, eggs, and cottage cheese until you have a smooth batter.
Add the rest of the ingredients, and continue blending until everything is well-combined.
When making the first waffle, spread a little oil to avoid sticking to the waffle iron. You don’t have to add butter for the rest of the waffles.
Serve the waffle with fresh fruit, mascarpone, cacao nibs, nuts, or your favourite topping.
