Ingredients

Scale

6 Eggs

1 Big  Banana

3 dl Milk

1/2 dl Coconut oil (30g)

Pinch Salt

1 tsp Baking powder

1 tsp Vanilla powder

1 tsp Xanthan gum *

1 tbsp Maple syrup (optional)

2,5 tbsp Raw cacao powder

90g Oatmeal GF

100g Bob’s Red Mill GF 1 to1 * (look under note)

1 small handful of dark chocolate drops

Instructions

Preheat the waffle iron.

Smash the banana coarsely and come in a medium bowl.

Melt coconut oil.

Mix everything in the bowl with the smashed banana with a mixer until well combined. Add the chocolate drop to the mixture.

Grease the waffle iron with coconut oil (only for the first one), bake the waffles and continue until there is no more dough left.

Spread peanut on top of the waffles, and place fresh strawberries and chocolate drops on top.

Notes

Eat & Enjoy!

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
