Topping to the tasty banana waffles can be adjusted according to whatever you like and in season. Since I moved to Japan, I have had to accept I can’t get every fruit I would like, as you only get it when it is in the season.
Healthy Banana Waffles
You can make waffles in several ways, which applies to both the sweet and the salty versions. These banana waffles contain oatmeal and ripe bananas, which are mashed and added to the dough.
Oats are generally delicious to use in baked goods, and it has high fibre content and is, therefore, incredibly filling. In addition, the taste is mild, unlike many flours with high fibre content. That is precisely why this combination of ingredients for the banana waffles is perfect.
Toppings for Banana Waffles
Like regular waffles, you can top your banana waffles with many different ingredients; the choice is up to you!
Fruit and berries: This depends to a large extent on the season. In addition to bananas, there are also apples, kiwi, grapes, strawberries, raspberries, blueberries etc.
Chocolate and nuts: Dark chocolate drops, cacao nips, chopped nuts, such as walnut, peanuts, pecans and other goodies can be sprinkled on the banana waffles.
Mascarpone and peanut butter: Mascarpone and peanut butter or other nut butter are good suggestions for serving.

Ingredients
2 Ripe bananas
6 Eggs
100g Cream cheese
1.5 dl Milk
30g Coconut or sunflower oil
1 tsp Vanilla essence
1 tsp Baking powder
1 tsp Xanthan gum *
90g Oatmeal
100g 1X1 Bob’s Red Mill Flour *
Instructions
Heat waffle iron.
Mash the banana in a bowl.
Add the rest of the ingredients to the bowl. Mix until the dough is smooth with a mixer.
When the lamp is green, pour the dough into the waffle iron.
Bake the waffles ill they are done.
Take the waffle out with a small palette, place it on a plate and continue until there is no more dough left.
Spread mascarpone on the waffles, and place sliced banana, kiwi, pecan nuts and frozen-dried raspberry on top.
