These Gluten-Free Coconut Waffles with creamy yoghurt, blueberry jam and shredded coconut are the most delicious combination and will lighten your week or weekend mornings. Waffles are incredibly easy to make but feel like a luxurious breakfast treat! 

I will say there are almost no limits to what you can combine with waffles, such as carrots, liquorice, peanut butter, mascarpone or the most delicious berry cream. There are so many options. Just use your imagination!

Ingredients

Scale

6 Eggs

1,5 dl milk

1/2 dl Coconut oil (30g)

Pinch Salt

1 tsp Xanthan gum *

1 tsp Baking powder

2 tbsp Coconut fibre flour

60g Shredded coconut

90g Hot cereal oat bran * 

100g 100 g Bob Red Mill flour 1X1 *

Instructions

Heat the waffle iron.

Blend all the ingredients for the waffle dough together.

Bake the waffle until you have no more dough left.

Serve the waffles with creamy yoghurt, blueberry jam (sugar-free) and shredded coconut flakes.

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
