Savoury Zucchini Waffles are perfect for lunch and dinner or as a healthy snack. I also dare to say that your children will not notice vegetables. That's a win-win if you ask me, and If you have children who are not so fond of the greens, these waffles would be a great choice! Zucchini is a super ingredient for baking, both salty and sweet. I am a fan of using vegetables in my baking. The Savoury Zucchini Waffles can either be served with cold cuts such as bread or sandwiches or with a salad or similar. Ours was done as an open toast in the oven with mustard, chicken, paprika herbs, cheese, tomatoes and avocado on the side! I can highly recommend you to try it!Print

Savoury Zucchini Waffles are perfect for lunch and dinner or as a healthy snack.

Ingredients
6 Eggs
100g Cottage cheese
1.5 dl Milk
1/2 dl Oil (30g)
1 tsp Baking powder
1 tsp Xanthan gum *
1 –1 1/2 tsp Parsley
1 –1 1/2 tsp Basil
90g Oatmeal Gf
100g Oatmeal flour
400g Roughly grated zucchini
Instructions
Roughly grate the zucchini and put it aside.
Mix all dry ingredients in a bowl
Stir in milk, oil, eggs and species together with zucchini in another bowl.
Add the wet mixture to the dry one and whisk it thoroughly together until well-combined.
Bake the waffle and continue until there is no more dough left.
Serve the waffles with yoghurt, pecan nuts and grated carrot.
