Carrot waffles are a delicious start to the day, a sweet little snack or a healthy everyday dessert. I love the taste of carrot, and I love waffles - so I decided to combine them. Carrot waffles are a delicious start to the day, a sweet little snack or a healthy everyday dessert.

Ingredients
240g Roughly grated carrot
Heat waffle iron.
200g Oatmeal
75g Whole-grain buckwheat flour
2 tsp Cinnamon
1 tsp Ginger
1 tsp Cardamom
1 tsp Baking powder
1 tsp Xanthan gum *
4 dl Milk
30g Coconut or sunflower oil
4 Eggs
1 tsp Vanilla essence
Instructions
Roughly grate the carrot and put it aside.
Mix all dry ingredients in a bowl.
Stir in milk, oil, eggs and vanilla essence together with carrots in another bowl.
Add the wet mixture to the dry one and whisk it thoroughly together until well-combined.
Bake the waffle and continue until there is no more dough left.
Serve the waffles with yoghurt, pecan nuts and grated carrot.
