Carrot Waffles (Gluten-Free & Low FODMAP)

Carrot Waffles are healthy to eat for breakfast or delicious for a dessert! The waffles are quick and easy to make; furthermore, you can top them with your favorite toppings. Carrot waffles are a delicious start to the day, a sweet little snack or a healthy everyday dessert. I love the taste of carrot, and I love waffles - so I decided to combine them. Last but not least, waffles are faster to make than baking a cake; it is at least as delicious, but much much healthier! You can eat Waffles for all meals and any occasion if you ask me!

Carrot Waffles (Gluten-Free & Low FODMAP)

Ingredients

240g Roughly grated carrot

Heat waffle iron.

200g Oatmeal

75g Whole-grain buckwheat flour

2 tsp Cinnamon

1 tsp Ginger

1 tsp Cardamom

1 tsp Baking powder

1 tsp Xanthan gum * 

4 dl Milk

30g Coconut or sunflower oil

4 Eggs

1 tsp Vanilla essence

Instructions

Roughly grate the carrot and put it aside.

Mix all dry ingredients in a bowl.

Stir in milk, oil, eggs and vanilla essence together with carrots in another bowl.

Add the wet mixture to the dry one and whisk it thoroughly together until well-combined.

Bake the waffle and continue until there is no more dough left.

Serve the waffles with yoghurt, pecan nuts and grated carrot.

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
