Oatmeal Pancakes – Banana Split is excellent to serve as dessert and super easy to make. A bonus is that you can make the pancakes beforehand; what not to like?

Can I use Oatmeal Pancakes for something else?

Yes, of course…………

The pancakes are healthy and unsweetened; what a win if you asked me! However, the oatmeal flour gives a nutty taste, making them even better. Therefore you can use the Oatmeal Pancakes as breakfast or as a healthy snack. There are so many options!

What toppings are good for healthy Oatmeal Pancakes?

Well, the short answer is about anything, as the pancakes are neutral in taste.

  • Spread Mascarpone, cream cheese, peanut butter or lemon curd.
  • Fresh fruit: Kiwi, grapes, all berries, banana or pineapple.
  • Nuts: Peanuts, pecan, walnut, macadamia, frozen-dried raspberries or cacao nibs.

How to store the Oatmeal Pancakes

I make a double or sometimes triple batch to put leftovers in the freezer. Put a small baking paper between each one.

Ingredients

Scale

1/2 L Oatmeal milk

3 Eggs

1/2 tsp Cardamom

Salt Pinch

100g Oatmeal flour

100g Bob's Red Mill GF 1 to1 *

Toppings

Banana

whipped cream,

Chocolate sauce

Pecan nuts

Frozen-dried raspberries

Instructions

Mix milk, eggs and salt in a large bowl.

Sift the flour in the mixture with a hand-held mixer until well combined.

Preheat a pan over medium-high heat with a bit of oil (only for the first one).

Serve the pancakes with half banana whipped cream, chocolate sauce, and pecan nuts and sprinkle frozen-dried raspberries.
