Carrot Pancakes
These Carrot Pancakes can brighten up your mornings with pancakes loaded with fun, colourful, and yummy toppings!
You can serve the pancakes for breakfast, at the weekends, snacks, or even dessert! There are so many options!
Can I Include Vegetables In Your Pancakes?
The simple answer is YES.
Blend the vegetables.
Yes, that was easy.
Right?
I blended the carrots with half of the milk for this recipe until smooth. You can’t taste the carrots, which is a win for everyone, but the carrots give the pancakes a beautiful orange-ish colour and are healthy.
It’s a great way to get more vegetables in your diet.
What not to like?
Are The Carrot Pancakes Sugar-Free?
Yes.
You heard me.
What a win!
Luckily the pancakes are sweetened by the blended carrots, so perfect if you want to eat pancakes without sugar.
If you want the pancakes naturally sweetened, put a mashed banana in the dough.

Ingredients
2 Big carrots
1 L Milk
6 Eggs
Pinch Salt
1 tsp Cardamom
2 tsp Cinnamon
500g Bob Red Mill flour 1X1 *
Instructions
Peel the carrots, cut the carrots into small chunks and add to the blender.
Pour in half of the milk and blend thoroughly.
Add the liquid to a large bowl and put the rest of the ingredients in the bowl—Mix with a hand-held mixer until well combined.
Start frying the pancakes; I like to use a little oil for the first one, and it is not necessary to continue to put oil on the pan for the rest.
I love to serve them warm, but they’re excellent at room temperature too.
Notes
Eat & Enjoy!
* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
