Peppernuts are a traditional Danish Christmas cookie that is highly addictive, tiny, crunchy cookies filled with warming spices.

Usually, you eat them in October, November and December. The peppernuts are very popular.

 This traditional Danish Christmas cookie is highly addictive, tiny, crunchy cookies filled with warming spices.

Ingredients

125g Butter

200g Bob’s Red Mill GF 1 to1 *

125g Sugar

1 Eggs

2 tsp Cardamom

2 tsp Cinnamon

1 tsp Baking powder

1 tsp Vanilla essence

1 tsp Cloves

1/2 tsp Pepper

1 Pinch of salt

Instructions

Heat the oven to 180C.

Mix it all well. Roll the dough for long sausages. Cut into suitable sizes about 1×1 cm. and roll them round before placing them on a baking sheet. If the dough sticks to the table, add a bit of flour.

Bakes for 10 minutes until they turn golden at the edges. Put them cool on a wire rack.
