Vanilla Wreaths (Gluten-Free & Low FODMAP)

Danish butter cookies is another traditional and trendy Danish Christmas recipe. This cookie is called Vaniljekranse, directly translated as vanilla wreaths.

The original recipe contains almonds, which are high in FODMAP. Therefore I exchanged the nuts for macadamia instead, and the cookies are still as delicious if you ask me!

Vanilla wreaths are a very traditional cookie, and it goes way back; I remember making these cookies with my mom when I was a kid – shaping the small round cookies is just super fun.

It is an easy dough to make, as the recipe includes simple ingredients mixed into a soft and sticky dough. Easy peasy, right?

The vanilla wreaths are a super delicious classic Christmas cookie, and it is crispy and delicious, with a good taste of vanilla and macadamia. Therefore, in my opinion, it is one of the best cookies at Christmas time.

You can easily bake Vanilla wreaths in advance as they can stay in an air-tight container tightly closed for one month. Therefore, you can easily bake them early and enjoy them throughout Christmas.

The vanilla wreaths are a super delicious classic Christmas cookie!

Ingredients

75g Macadamia nuts

2 tsp Raw vanilla powder

170 g Sugar

200g Soft butter

250g Bob's Red Mill GF 1 to1 *

1 Eggs

Instructions

Blend the macadamia nuts to a consistency of flour.

Whisk vanilla powder, sugar and butter.

Add in the rest of the ingredients with an electric mixer.

Put in a spray bag with a star shape and begin press wreaths shape.

Bake the cookies at 200 C for 10-14 minutes. Be careful not to them too much; otherwise, they will dry. Let them cool down before removing them.

Serve the cookies for dessert.
