Orange Waffles (Gluten-Free & Low FODMAP)

Take a look at these beautiful orange waffles.

They will differently lighten up your breakfast table.

These Orange Waffles were created as I was low on food and wanted to whip up something easy and simple for breakfast.

We used the waffles as bread, where we topped our favourite toppings, such as fruit, berries, coconut flakes, cacao nips and mascarpone or peanut butter.

Ingredients

Scale

350g Carrots

6 Eggs

1 Milk (60g)

100g Cottage cheese

1/2 dl Oil (30g)

1 tsp Salt

1 tsp Baking powder

1/2 tsp Cardamom

1 tsp Cinnamon

1 tsp Xanthan gum *

90g Oatmeal GF

100g Bobs Red Mill 1X1 GF flour  * or self-raising flour

Instructions

Blend carrots with eggs, milk, and cottage cheese and pour into a medium bowl.

Heat the waffle iron.

Add the rest of the ingredients and stir/mix until well combined.

Bake the waffles for 2-4 minutes on each side, depending on the crispiness you prefer.

Use it instead of bread to serve the waffles, and put your favorite toppings on.

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
