What Is Danish Red Cabbage?

The traditional Danish red cabbage is also known as Rødkål. This cabbage is traditionally eaten at Christmas, especially with Danish Roast Pork.

Danish Red cabbage is a traditional and trendy side dish for many different dishes. Red cabbage is served all year round; however, it's popular at Christmas, with the traditional Christmas eve dinner on the 24th of December.

In Our Family

As we don't make roast pork for Christmas dinner, I made waffles instead, as I like red cabbage and think it belongs in the Christmas holidays. The waffles will be great with the roasted pork as a sandwich or Danish meatballs the day after. Another option is to use duck breast (like in the photo) on the waffles, which will match great too.

The red cabbage waffles are filled with lovely Christmas spices such as cardamom, cinnamon, ginger, and oranges. And you can make the waffles year-long; what a win.

500g Red cabbage

6 Eggs

11,1/2 dl Milk or water (60 or 90g)

1/2 dl Oil (30g)

1 tsp Salt

1 tsp Baking powder

1 tsp Cloves

1 tsp Ginger

1 tsp Xanthan gum *

2 tsp Cardamom

2 tbsp Cinnamon

1 Orange (zest juice)

90g Oatmeal GF

100g Bob Red Mill flour 1X1* or self-raising flour

Xanthan gum gives gluten-free baked goods a soft texture and moist crumb that we know from the classic baked goods.

* Bob's Red Mill 1 to 1 is a flour blend you use where you usually use wheat flour. I recommend the product, and I order from Amazon & Iherb.
