First black beans give a lot of moisture protein, and you can even leave the flour out, as pureed black beans can replace flour when baking. Total win! Another bonus will also cut calories and help you make more gluten-free recipes.

The Flourless Chocolate Muffins (Gluten-Free & Low FODMAP) are most with lovely chocolate taste, light texture and a great dessert.

Maybe you find it unexpected and a bit shocking, but as it turns out, black beans make delicious desserts. Therefore it pairs well with other ingredients to keep your treats healthy and delicious.

Even though there are black beans in them, I promised you couldn’t taste them, so you are good to go.

The muffins are very moist; you can keep them at room temperature for several days if you like. I always put them in the freezer the day after if I don’t plan to use them immediately.

Are the Flourless Chocolate Muffins Low FODMAP Friendly?

If you are on the LFM diet, you might wonder if you can have beans at all… I hear you. But luckily, the short answer is YES, Yes and Yes.

Even though they contain black beans, each muffin has only 16g, and you can have up to 40g per serving; yeah.

Flourless Chocolate Muffins (Gluten-Free & Low FODMAP)

Ingredients

Scale

200g Black beans

100g Butter

100g Sugar

1 Pinch salt

1/2 tsp Baking soda

1 tsp Vanilla essence

 2 tsp Baking powder

30g Cacao

5 Eggs

100g Chocolate drops

Instructions

Blend beans and sugar in a food processor. Add the rest of the ingredients except chocolate and mix a combined mixture. Add around half or more to the batter. The rest you sprinkle on top later.

Melt 75g of the chocolate and stir in the dough.

Pour the dough into 12 muffin forms and sprinkle the rest of the chocolate drops on top before baking them.

Bake the muffins at 180C for about 30-35 minutes or until they are finished.
