The pancakes are crispy, light and fluffy, with a lovely sweet taste from the mangos; the mangoes get a little caramelised from cooking on the grill, making them even better.
You can have these pancakes on the table in 30 minutes or less, as they are quick and easy to make.
What You Can Use Them For
1. You can serve them for breakfast with skyr natural, maple syrup and fresh mango.
2. They are great cold and plain for your afternoon or evening snack with vanilla skyr, cacao nips and coconut flakes on top.
3. Dessert with vanilla ice cream, dark chocolate and walnuts.
4. Perfect to put in your children’s box for school or your own snack on the go.
Tips To The Recipe
Furthermore, they are make-ahead friendly. I have found that pancakes taste just as good as fresh ones when they’ve frozen ahead. They will be ready to go on those busy weekday mornings!
The pancakes will freeze very well; If you have any leftovers, I recommend placing a sheet of baking paper between each pancake and then sealing the stack in a freezer bag. Pop them in the toaster to reheat from frozen.

Ingredients
193g Sifted Gluten-free Self-raising flour (Doves Farm)
1 tsp Baking powder
¼ tsp salt
2 Eggs
3 dl Milk
1 tsp Vanilla paste
80g Melted butter
250 g Mangoes (I used frozen, which was defrosted)
* Toppings *
Skyr natural
Mango cubes
Coconut flakes
Instructions
Come flour, baking powder and salt to a medium bowl.
