American Pancakes

Imagine that you wake up to the smell of freshly baked pancakes.

Reaching out for a freshly made cup of coffee with a splash of milk.

You take a plate, stack some pancakes, pour maple syrup & put butter on top.

Yum!

American Pancakes

These thick little classic American Pancakes are super easy, and it’s become one of my favourites. Maybe it will become yours too?

Serve the pancake with maple syrup and butter, but other toppings will also fit perfectly!

The pancakes with light up on the brunch table or for other celebrations.

Ingredients

193g Sifted Gluten-free Self-raising flour (Doves Farm)

1 tsp Baking powder

¼ tsp salt

2 Eggs

3 dl Milk

1 tsp Vanilla paste

80g Melted butter

Maple syrup

Butter

Instructions

Come flour, baking powder and salt to a medium bowl.

Whisk with electric hand mixer milk, egg, vanilla paste, and melted butter for about a minute. Add all the dry ingredients to the mixture for a few minutes more. You can set the batter aside to rest for 5 minutes.
 
Melt a little butter for the first round on a non-stick skillet and heat on medium heat. Add the dough to the hot surface and repeat until there is no more room. Scatter a few chopped mangoes on top of uncooked pancakes.
 
Cook until bubbles form and pop on the consistency of the batter; for about 3-4 minutes, remove cooked pancakes to a plate and tent them with aluminium foil to keep them warm. Repeat with the remaining batter.
 
Serve with skyr natural mango cubes and coconut flakes.
