Delicious And Fresh Rhubarb Juice. Rhubarb is one of the things that reminds me of Danish summers, together with strawberries and new potatoes. I am happy when I see rhubarb in my local shops.
Some years ago, we had a house in Denmark with plenty of rhubarb in our garden. I had to give some of the crop away because we had too much.
Homemade Delicious And Fresh Rhubarb Juice are excellent to enjoy when the weather is hot, and you need to cool down.
The extract has a great, beautiful, red-pinkish colour. You can either drink the rhubarb juice or mix it with sparkling water.

Delicious And Fresh Rhubarb Juice!

Ingredients
600g Rhubarb
200g Sugar
1 small tsp Vanilla powder
1,5 L Water
Instructions
Cut the rhubarb into small chunks and come in a pot with the remaining ingredients.
Let it boil up slowly and boil for 15 minutes. Then rest for 15 minutes and repeat the same. Get the rhubarb juice through a sieve, and be careful not to press the rhubarb chunks because the liquid will then be unclear.
Serve the rhubarb juice in fancy glasses with ice cubs and straws.
