Originally Rice a la mande to a Low FODMAP friendly Rice Macadamia

This is a traditional recipe for a Danish Rice dessert, also known as Rice ala mande. The dessert is always served after the Christmas dinner on December 24th and contains a whole almond, a funny Christmas lottery. The one who finds the almond wins a small gift.

This recipe for Rice ala mande is probably the most popular and traditional Danish Christmas dessert you can make. Rice ala mande is a rice pudding with vanilla, almonds and whipped cream and is served with warm or cooled cherry sauce.
As almond and cherry sauce is high in FODMAP, I have had to adjust the recipe to a more Low FODMAP Friendly version. Instead, I swapped the almonds for macadamia nuts and the cherry sauce for the strawberry sauce. The new version is super yummy!

Danish Rice Dessert With Cream & Macadamia is typically served as a Christmas dessert right after dinner on Christmas Eve. In Denmark, we celebrate Christmas on Christmas Eve, not Christmas Day like in the UK or the US. In Denmark, we spend Christmas Eve with family, having a lovely Christmas dinner, going around the Christmas tree, singing carols, and exchanging presents.

Macadamia present in the Danish Rice Dessert With Cream & Macadamia

When the Danish Rice Dessert With Cream & Macadamia is served, it’s a delicious dessert and a fun game for children and adults. Danish Rice Dessert With Macadamia contains a lot of chopped macadamia nuts. It’s a great tradition, and the person who makes the dessert leaves one macadamia unchopped. This extra whole macadamia nut is now mixed into the Rice Dessert With Macadamia. When the dessert is served, the person who gets the entire macadamia in their serving wins a present.

How to make the Danish Rice Dessert With Cream & Macadamia

The first step is to make a portion of Danish rice pudding. You can eat the Danish rice pudding as it is. Therefore, I have made a different recipe for the rice pudding, but you can also follow the instructions below, which have been slightly changed because it is used to make the Danish Rice Dessert With Macadamia.

The difference between the two recipes for rice pudding is that the rice macadamia version of the rice pudding contains a vanilla bean. However, you can use both versions of the rice pudding recipes to make the Danish Rice Dessert With Cream & Macadamia

Add sugar, whipped cream, and chopped macadamia nuts when the rice pudding is ready. The dessert is typically served with warm or cooled strawberry sauce, and it’s delicious. Most people make rice pudding the day before Christmas Eve and eat some of it for dinner. On Christmas Eve, the pudding leftovers are mixed with sugar, whipped cream and macadamia nuts and served as dessert after Christmas dinner.

Tip
This is a smart way to save some time in the kitchen on Christmas Eve as you don’t have to spend an hour boiling and preparing the rice pudding. This is probably the most traditional Danish Christmas dessert you can have.

Danish Rice Dessert With Cream & Macadamia

Ingredients

Rice porridge

1/2 dl Water

180g Risotto rice

2 L Whole Milk (LF if needed)

 1 Vanilla bean – the grains from here

1/2 tsp coarse salt

Danish Rice Dessert With Cream & Macadamia 

100g Macadamian nuts

1 tbsp Sugar *

4 dl Whipping cream 

Strawberry or Cherry sauce

350g Frozen strawberries or Cherries

1 tbsp Sugar

1/2 tbsp Potato starch

Instructions

Rice pudding

Bring water and rice to a boil in a thick-bottomed saucepan. Cook the rice over even heat and while stirring for approx. 2 min. Scrape out the vanilla grains and put them in the saucepan. (You can set the whole vanilla stick in to give extra taste) Take the vanilla stick out when the rice pudding is done.

Add milk and bring the pudding to a boil over high heat while stirring.

Turn down to low heat, stir in the pan for approx. 1 min and put the lid on. Cook for approx. 40 min – stir occasionally. Place the pudding in the fridge until it is cold – preferably until the next day.

Danish Rice Dessert With Cream & Macadamia 

Remove one whole macadamia and chop the rest.

Stir rice pudding, sugar and chopped macadamia nuts together.

Whip the cream to a light foam and turn approx—1/3 of the whipped cream together with the rice pudding. Then, carefully fold the rest of the whipped cream in the rice pudding and the whole macadamia nut – hold if necessary. Something leftover if you prefer your rice a la macadamia little firmer inconsistency.

Taste the rice macadamia dessert and place it covered in the fridge for serving.

Strawberry or Cherry sauce

Take a saucepan, and pour in the strawberries with water. Add the sugar and let it boil. If you prefer a smooth sauce without strawberry or Cherry pieces, blend the sauce now before going to the next step.

Take the potato starch and mix it with a little bit of water. Then smooth the strawberry sauce with this; the sauce must not boil after adding potato starch. Stir the sauce well and taste it to your liking.

Serve the sauce hot or cold, as you prefer. We usually heat it in the microwave.

* If you like things very sweet, add more sugar than the recipe says, as I prefer things less sweet.
