These Waffles With Lemon have an excellent taste of lemon and vanilla. The waffles are super crispy and can be eaten plain, as they are sweet enough. However, we like to put blueberry jam on our family’s waffles, although you could add whatever toppings you like!

Firstly the waffles are pretty filling as they contain oatmeal, so they are good to use for breakfast, and a total win if you ask me! You can even make them in the morning, as they are easy to make; what’s not to like?

Secondly, the Waffles With Lemon can be eaten cold or warm, so they are perfect if you need a snack on the go. Therefore you can put the waffles in your children’s snack boxes or give them an afternoon snack when they come home from school.

Waffles With Lemon

Ingredients

Scale

2 Eggs

3 dl Milk

80g Coconut oil

1 tsp Baking powder

1 tsp Vanilla powder

1 tsp Xanthan gum*

1 tsp Cardamom

1 Pinch Salt

1,5 Lemon

3 tbsp Sugar

180g Plain white flour GF*

60g Oatmeal GF

Instructions

Grate lemon zest and squeeze juice into a small bowl.

Melt coconut oil.

Preheat the waffle iron.

Mix everything in a medium bowl with a hand mixer until well combined. Add the lemon zest and squeeze the juice into the mixture.

Grease the waffle iron with coconut oil (only for the first one), and bake the waffles.

You can also use the dough for Belgian waffles if you fancy!
